What do you think of when you hear the word, "Idaho"?
Potatoes. A month ago, we even had our Uber driver from Ghana tell us that when he thinks of Idaho, all he thinks of is potatoes. Then he asked us if we eat potatoes all the time. Our answer was no. Until recently, when B brought home a giant box of 80 potatoes. And now, yes. All we eat is potatoes. Fried potatoes, mashed potatoes, scalloped potatoes, hash browns, and one time we even put potatoes on a pizza! (It was actually good.) I'm kidding, really; they're not all we eat. We still have our normal stuff, but now it's with a hefty side of potatoes. :) R

Potatoes are pretty nutrious and have been a mainstay for many people. They have gotten a bad reputation because they are starchy and high carb. I for one love potatoes and I'm so glad you've been eating them! (PS. Be sure to eat the skin, it contains most of the vitamins and minerals.)
